Up until the middle part of my freshman year in college I was extremely unhealthy. Cakes, cookies, ice cream, processed junk, soda, you name it. Thankfully I kicked myself into gear and turned my life around. Obviously working out and being active played a large part in this, but eating was where it all started and learning to be consistent was essential.

Vegan Eggplant Meatballs from Skinnytaste – Honestly, I could eat these forever. And you can mix up the sauce you use to give it a different kick (my personal favorite is a butternut squash sauce that you can only find seasonally at Aldi)
Baked Ziti and Summer Vegetables from Rantings of an Amateur Chef – Pasta, veggies, cheese…what else do you need?
Shrimp and Zucchini with Bowties in Light Tomato Sauce from Skinnytaste – Unless you don’t like shrimp, it’s delicious and easy to make.
Tomato and Spinach Strata from Eating Well – Always good. Never disappointing. You can use any bread and/or sauce you want a
Balsamic Glazed Roasted Vegetable Meatloaf – Better than your grandma’s meatloaf (blasphemy, I know). Pair it with broccoli and mashed cauliflower (or mashed potatoes).
Cream of Zucchini Soup from Skinnytaste – MY FAVORITE. Not just this particular recipe, but you can use ANY vegetables you want. I like broccoli, sweet potato, cauliflower, carrot, you name it. I also add quinoa to make it a little more filling.
New Discovery: Sweet Potato, chicken, and quinoa soup – from Chelsea’s Messy Apron. I just made this recently and let me tell you….it’s DELICIOUS.
